Barrel-Aged Vinegar
Vinegars in this collection have been aged in American oak barrels formerly used for rye whiskey production. Barrel aging gives vinegars a mellower flavor profile but does not impart particularly woody or whiskey flavor. We use small, 25 gallon barrels sourced directly from a craft distillery in upstate New York.

What does barrel-aged mean?
Barrel-aged means that we age our vinegar in wooden barrels over an extended period to develop deep, complex flavors. How should I use vinegar?
Just about everywhere other than breakfast cereal. Really.
Everyone knows that vinegars are essential for vinaigrettes, oil and vinegar salad dressings. But, with a little experimentation, you will see that acid is what was missing from many of your dishes.
You can marinate meats using vinegar, brighten up sauces, season roasted vegetables, make cocktails, even bake with it (google vinegar pie).
The key is to use vinegar sparingly and to adjust flavors slowly by tossing in just a dash or two at a time.

This is my second-favorite vinegar for drinking. The fruity hops really shines through. I use about 15ml of AVW IPA Beer Malt Vinegar, about 2.5-3ml of yuzu, stevia to taste in about 12oz of water. I really appreciate the long and complicated finish of this vinegar.
Just the right amount of tang combined with a pleasant sweetness
I purchased a bottle to see what it tasted like because I was cluless. Wow! My wife loves it so much she drinks a teaspoon full a day right out of the bottle. I ordered 6 more bottles after she tasted it. Another home run!

A dear friend brought back some Rose' vinegar as a gift to me, from Italy. It was wonderful and I was looking on line for something like it. That is when I stumbled across American Vinegar Works, and so I ordered two bottles. It more than met my expectations. Now I need to order the sampler pack and try them all.
I write here about apple cider vinegar, but I've been using many of the vinegars from American Vinegar Works, and honestly love all of them.

I wanted to start purchasing from small businesses and found AVW with a little research. Absolutely LOVE the apple cider vinegar and I love that it's made in small batches. The apple cider vinegar is delish and I use it daily. Highly recommend!
I am truly a fan of whole foods without chemicals or preservatives, and I'm also a lover of salsa/spicy foods. I make my own "12 pepper Mayo" based upon a "chili lime mayo" recipe I found but I thought rather flat, so I began to add my own touches and record quantities/ingredients so I can replicate it. After 8 batches, I added your "Hot" apple cider vinegar. Now my family/friends say I should attempt to sell this commercially, it definitely has personality. I have no desire to attempt that, but I will certainly be ordering more vinegar!
My go to vinegar for salads
I’m really glad to have found American Vinegar Works. I am so impressed with your dedication and staying true to your ideals. I’m from the south and vinegar is always on the table. This vinegar has impressed me and everyone else in my family. I initially purchased a 8.5 oz bottle of the hot cider vinegar and will definitely be purchasing more.
