Made from a Massachusetts craft IPA this vinegar is malty and tangy leaving you with a slight mouth water finish from the hops. It is slow fermented in small batches using a unique process from the early 1800s and aged in 25-gallon American oak barrels. Our IPA Beer Malt Vinegar is the ultimate vinegar for fish and chips.

Worth Waiting For

Modern vinegars have lost their way, so we stepped back in time to recreate a process from 1823.  Our equipment doesn’t exist anymore so we remade it in partnership with local universities.

After slow fermentation our vinegars are barrel aged before being hand bottled raw and unfiltered. It all takes a lot more time and care but we think the results are spectacular. I hope you will too.

We create vinegars with flavor profiles that reflect a sense of place by working exclusively with American wines, ciders, and brews.

 Our vinegar works is housed in the blacksmith shop for an old textile mill complex in the heart of New England that is on the National Register of Historic Places.

It's a keeper.

The IPA Beer Malt vinegar on fish and chips was outstanding. An underlying subtle hops flavor came thru making for a most enjoyable meal.

Beer Malt Vinegar

Yummmmm, I put it on some chicken drumsticks with olive oil & sea salt, then marinated for a couple of hours. Fin ally, I broiled them for 20min/side in a toaster oven! They were delicious! The Beer Malt Vinegar is less tart than the Sherry Vinegar. Both are delicious!!!
