Barrel-Aged Vinegar
Vinegars in this collection have been aged in American oak barrels formerly used for rye whiskey production. Barrel aging gives vinegars a mellower flavor profile but does not impart particularly woody or whiskey flavor. We use small, 25 gallon barrels sourced directly from a craft distillery in upstate New York.
Barrel-Aged Vinegar
What does barrel-aged mean?
Barrel-aged means that we age our vinegar in wooden barrels over an extended period to develop deep, complex flavors. This process allows the vinegar to interact with the wood, absorbing subtle nuances and enriching its taste profile. By carefully selecting barrels made from specific types of wood, such as oak or cherry, we can impart unique characteristics to the vinegar, such as hints of vanilla, caramel, or smoke.
The aging process not only mellows the acidity but also enhances the overall richness and smoothness of the vinegar. We take pride in this traditional method, as it exemplifies our commitment to quality and craftsmanship, resulting in a premium product that stands out in both flavor and sophistication.
How is barrel-aged vinegar different?
Barrel-aged vinegar stands out from standard vinegars due to its complex flavor profile, which is achieved through a meticulous aging process in wooden barrels. This method allows the vinegar to absorb subtle nuances from the wood, adding depth and richness that can’t be found in quick-fermented varieties. Over time, the vinegar develops a smooth, well-rounded taste with layers of sweetness, acidity, and occasionally even hints of vanilla or caramel, depending on the type of wood used.
The aging process also often results in a thicker, more robust texture, enhancing its versatility in culinary applications. Whether drizzled over salads, used in marinades, or as a finishing touch to elevate gourmet dishes, barrel-aged vinegar offers a superior quality that transforms ordinary meals into extraordinary culinary experiences.
How should I use vinegar?
Just about everywhere other than breakfast cereal. Really.
Everyone knows that vinegars are essential for vinaigrettes, oil and vinegar salad dressings. But, with a little experimentation, you will see that acid is what was missing from many of your dishes.
You can marinate meats using vinegar, brighten up sauces, season roasted vegetables, make cocktails, even bake with it (google vinegar pie).
The key is to use vinegar sparingly and to adjust flavors slowly by tossing in just a dash or two at a time.

from 1553 reviewsI’m pretty much a red wine vinegar fanatic and this is the best I’ve ever tried.I’ll never buy another brand, the search for Red Wine Vinegar perfection has officially ended 🙏🏻🙏🏻
Although I like the product, I think the packaging is over done. I get protecting the product, but it seems to take for ever to get it opened and unroll the mile of brown paper and then recycle it. What gets me is this comes from about 5 miles down the road and I can't just go somewhere to simply purchase it.
Finally, real vinegar again! I loved the sampler size to see which larger bottles I will purchase later. Every one was pungent and flavorful with no off tastes. Will definitely be ordering the full size bottles soon!
This was the first AVW vinegar I ever ordered. I love it . There is no other red wine vinegar that compares at all! Glad they made a larger bottle for it too!
I never used sherry vinegar much before but I have come to really enjoy it. As with all of American Vinegar works products it is clean and very flavorful.
Thanks for this guys!
Best on the Market
Their Apple cider vinegar is one of the best we ever tried, as for the rest of their collection! Amazing!
As always, your vinegar is excellent. This one has a nice sharp taste which I prefer over milder vinegars. It’s very good for making traditional French dressing that my grandmother (who was French) used to make for the family. Thank you and keep it up! Nancy
I use vinegar frequently when cooking and salad dressings / vinaigrettes. I ordered these because I was intrigued by the German method used to make them.
They are by far the best vinegars I've ever used or tasted! Will be a regular customer. 🙂
Best tasting apple cider vinegar ever! So smooth and exceedingly tasty.
I bought this companies vinegars to get more flavor into my salad dressings ( no store brands for us) we also make a slaw dressing without mayonnaise. They both are now more flavorful and great either way. We are in our 70’s and we are always finding ways to enhance good food. Mission accomplished
This is the best red wine vinegar. I love this on sandwiches and salad dressings. Great in cooking as well!
This is the best rice wine vinegar. I have a difficult time using grocery store bought rice wine vinegar now. The flavor pop from this vinegar is exceptional.
I grew up in a family where our Italian father made his own small batch vinegar from his own wine. I can taste the same quality in Rodrigo's red wine vinegar. It's clean, bright and has just the right amount of acidic bite. The first taste says "this is not mass produced." A wonderful product that I look forward to using for many years.
This Olive Oil is Great and Tastes Very Good
