Extra Virgin Olive Oil: California Organic

$29.00

Grassy, vibrant, and built for finishing

Organic olives, cold-pressed from a single family estate in California, blended for balance from two complementary cultivars. Expect a fresh, grassy nose, a rich mouthfeel, and a mild flavor that finishes with a tiny peppery wink—the kind of finishing oil that makes your produce and our vinegars feel dressed, not drowned.

Flavor profile

Fresh and grassy up front, gentle on the palate, with a clean peppery finish. It’s lively without being loud—perfect over grilled veg, beans, fish, and good bread.

Why cooks reach for it

Because it plays beautifully with acid. This olive oil was chosen to meld with our vinegars and fresh foods, so vinaigrettes come together fast and taste composed. We bottle it in a generous 500 ml so the classic 2:1 oil-to-vinegar ratio is always within reach.

Essential Kitchen Vinegars Four Pack

Worth Waiting For

Modern vinegars have lost their way, so we stepped back in time to recreate a process from 1823.  Our equipment doesn’t exist anymore so we remade it in partnership with local universities.

After slow fermentation our vinegars are barrel aged before being hand bottled raw and unfiltered. It all takes a lot more time and care but we think the results are spectacular. I hope you will too.
