Because the original machinery no longer existed, we engineered and rebuilt our custom fermenter by consulting historical records and partnering with local university craftsmen. We partner with local universities to custom rebuild 19th-century fermentation equipment, rejecting the rapid manufacturing methods of the 1900s. Our small-batch vinegars undergo two to three months of careful fermentation, followed by up to twelve months of aging in craft distillery oak barrels to develop rich, complex flavor profiles.
