American Vinegar Works Roasted Delicata Squash
Delicata Squash are a sweet fall gift.
For those of you less familiar with them Delicata squash are a type of winter squash that come around starting in September through about November. They are a sweet squash with thin, edible skin.
This exceptionally simple recipe is a great way to enjoy the Delicatas especially as they come into season and get sweeter.
Roasted Delicata work perfectly as an easy side for salmon or pork chops.

Which vinegar to use, and why
Squash is sweet and needs an acid that will not turn it sour. Maple cider vinegar deepens it instead. We use Maple Cider Vinegar here. It is slow-fermented and aged in oak at our mill in Worcester, Massachusetts, which is why it seasons the dish rather than just souring it.
Make it ahead and keep it
Roast ahead and dress while still warm, so the vegetables drink the vinegar in rather than sitting in a puddle of it.
