American Barrel California Sherry Vinegar is a classic Spanish-style sherry vinegar with Golden-State swagger—made from California sherry, then patiently handled for layered depth and a clean, high-tone finish. It’s double barrel aged for real complexity, so vinaigrettes, gazpachos, roasted veg, and pan sauces taste composed, not sharp. 

What makes it special

The base sherry—Palomino and Pedro Ximénez grapes grown in California—rests in barrels at the winery for three years before it ever reaches our mill. We then slow-ferment using an early-1800s process we recreated, and age it again in a 25-gallon American oak. Because sherry vinegars run higher in acidity, that extra-slow fermentation mellows the profile while keeping a lively snap. Hand-bottled raw and unfiltered.

Our American Barrel California Sherry Vinegar is fermented using sherry from California. 

The original sherry wine is made from Palomino and Pedro Ximenez sweet grapes grown in California and then barrel aged at the winery for three years.  Vinegar fermentation begins when the sherry reaches us in New England and is then barrel aged again after vinegar fermentation.

Sherry vinegars are traditionally high acid and our California Sherry is no exception.  This is our highest acid vinegar and is well-balanced through longer fermentation and longer barrel aging, as well as its lovely underlying nutty nose.

Is this really high-acid? Will it be too sharp?

It’s our highest-acid vinegar at 6.5%, but the long, slow process and time in oak round the edges, so it reads lively and composed rather than harsh. 

Best uses?

Vinaigrettes, cold soups like gazpacho, tomato dishes, roasts, and pan deglazing. It’s also excellent in mignonette and sturdy marinades.

Modern vinegars have lost their way, so we stepped back in time to recreate a process from 1823.  Our equipment doesn’t exist anymore so we remade it in partnership with local universities.

After slow fermentation our vinegars are barrel aged before being hand bottled raw and unfiltered. It all takes a lot more time and care but we think the results are spectacular. I hope you will too.
