Modern vinegar production has gone too far by sacrificing flavor for speed. We have gone a different way by embracing the value of time to revive an authentic production method from 1823. Because the original machinery no longer existed, we engineered and rebuilt our custom fermenter by consulting historical records and partnering with local university craftsmen. We brew our small batches inside a historic New England textile mill blacksmith shop that sits proudly on the National Register of Historic Places.

We partner with local universities to custom rebuild 19th-century fermentation equipment, rejecting the rapid manufacturing methods of the 1900s. Our small-batch vinegars undergo two to three months of careful fermentation, followed by up to twelve months of aging in craft distillery oak barrels to develop rich, complex flavor profiles.
