American Barrel California Sherry Vinegar
Made with California Sherry this vinegar is our take on a classic Spanish-style vinegar with some unmistakable added swagger from The Golden State.
This nutty vinegar is double barrel aged.
It first spends 3 years at the winery in California. We then slow ferment it in small batches using a unique process we recreated from the early 1800s and then barrel age it again. Because sherry vinegar is higher in acid the fermentation is extra slow which contributes to a mellower flavor, despite the higher acid.
Like all of our vinegars, this vinegar is raw and unfiltered and is then hand bottled for you to enjoy.

Our American Barrel California Sherry Vinegar is fermented using sherry from California.
The original sherry wine is made from Palomino and Pedro Ximenez sweet grapes grown in California and then barrel aged at the winery for three years. Vinegar fermentation begins when the sherry reaches us in New England and is then barrel aged again after vinegar fermentation.
Sherry vinegars are traditionally high acid and our California Sherry is no exception. This is our highest acid vinegar and is well-balanced through longer fermentation and longer barrel aging, as well as its lovely underlying nutty nose.
