Which vinegar to use, and why

Cider vinegar turns almost anything into a shrub. Here it does the job lemon usually does, with more behind it. We use 19.53 Miles From The Tree Apple Cider Vinegar here. It is slow-fermented and aged in oak at our mill in Worcester, Massachusetts, which is why it seasons the dish rather than just souring it.

Make it ahead and keep it

Mix to order. For a batch, combine everything except the ice and anything fizzy, chill it, and finish each glass as you pour.

Ingredients

  • 8oz chilled black tea

  • .5oz Beer Malt Vinegar (IPA or Porter)

  • .75oz of simple syrup 

  • .25oz fresh lemon juice 

Directions

  1. Add ice to a large glass and then pour in all the ingredients and stir. Add a slice of lemon or a sprig of mint.

  2. For a little kick, add 2oz of vodka or whiskey. Serves one but can easily scale or be made ahead-- just wait to add the ice until ready to drink.
