Cranberry Apple Cider Vinegar — 250 ml. Co-fermented with Cape Cod cranberries; tangy with a hint of cranberry and gentle sweetness. Min acidity 4%.
Tarragon Wine Vinegar — 250 ml. Co-fermented with Aged in oak barrels.; Tangy with a subtle herbal, licorice finish. Min acidity 5%.
Porter Beer Malt Vinegar — 250 ml. Massachusetts porter base; richer than standard malt with a smooth, warm malty finish. Min acidity 4%.
American Barrel California Sherry Vinegar — 8.5 oz. Classic sherry vinegar with a nutty, acid-balancing note. Min acidity 6.5%.

These vinegars are our modern takes on the classic vinegar styles of malt, rice, wine, and apple cider vinegars. These four vinegars are set in one of our custom boxes and include a recipe card. You can find production and ingredient details in each individual vinegar’s page but we have assembled them here as a set for easier grouping.

How are these made?

Slow-fermented with an early-1800s process, then aged in 25-gallon American oak and hand-bottled raw and unfiltered.

Modern vinegars have lost their way, so we stepped back in time to recreate a process from 1823.  Our equipment doesn’t exist anymore so we remade it in partnership with local universities.

After slow fermentation our vinegars are barrel aged before being hand bottled raw and unfiltered. It all takes a lot more time and care but we think the results are spectacular. I hope you will too.

We create vinegars with flavor profiles that reflect a sense of place by working exclusively with American wines, ciders, and brews.

 Our vinegar works is housed in the blacksmith shop for an old textile mill complex in the heart of New England that is on the National Register of Historic Places.
