Made with chardonnay from California this vinegar would be a blanc de blancs if it were a champagne. Luckily it is not, it is better.  It is slow fermented in small batches using a unique process from the early 1800s and aged in 25-gallon American oak barrels.

Our Better Than Champagne Vinegar is just that. It is not champagne vinegar, it is its' better cousin from across the pond and we couldn’t be happier with how this little upstart turned out.

Naming Note:  Why don't we call it Champagne vinegar? We told you- it's better... AND we strive to make vinegars with a sense of place and that respect that sense of place in other foods.  Champagne vinegar should come from the Champagne region of France.  Our vinegar is made from traditional champagne grapes (ie chardonnay) but it is made in our vinegar works in New England, not France.  This beautiful vinegar reflects the American wine tradition and builds on champagne-inspired vinegar flavor profiles.

Chardonnay Makes it Fancy

I should rather say...a touch of class. I just opened this up today and used it with my tilapia. I can't wait to give this vinegar some other cooking opportunities. The chardonnay flavor stands out, yet isn't overpowering at all. A great way to fancy-up many of your recipes. Oooo...I also combined it with sun-dried tomatoes for a little side dish.

Love them all!

Amazing vinegar, so worth it! All the types I've tried are good, an especial shout out to the unusual suspects: the porter malt, the montmorency cherry. The daily favorites for vinaigrette are the white chard, red wine and rose.
Let's talk about the bottles - I save and reuse them: they are great to refill with olive oil for vacations, or if you want a matchy matchy look on your counter. The labels peel off easily.
