Tarragon Wine Vinegar

A French classic reinvented in New England. 

Our Tarragon Wine Vinegar was created by co-fermenting California Chardonnay and tarragon flown in at its' freshest. For those who don't know, Tarragon is a fragrant herb with slender, pointed leaves, known for its distinctive anise-like flavor. It's often used in French cuisine, and it adds a unique twist to sauces, dressings, and chicken dishes.

By co-fermenting, rather than infusing, we have been able to create a vinegar with tarragon flavor throughout but without the sharpness of the herb.  

This vinegar was fermented and barrel aged for a year before being hand bottled.  It is a limited release. 

Perfect for salads and classic French sauces.

Modern vinegars have lost their way, so we stepped back in time to recreate a process from 1823.  Our equipment doesn’t exist anymore so we remade it in partnership with local universities.

After slow fermentation our vinegars are barrel aged before being hand bottled raw and unfiltered. It all takes a lot more time and care but we think the results are spectacular. I hope you will too.

 Our vinegar works is housed in the blacksmith shop for an old textile mill complex in the heart of New England that is on the National Register of Historic Places.

Absolutely delicious

I love the way this tastes on salads. I drizzle it over the greens and veggies and then drizzle on good olive oil. I don’t bother mixing them together. If there’s any left at the bottom of my salad bowl I drink it with a spoon. I may be guilty of pouring on too much of the tarragon vinegar just so I can do this. I use this on chicken and fish. After I finished the small bottle I ordered another, and then ordered the big one so I won’t run out. I will decant from the big one into the small one for ease of use. Highly recommended.

Wonderful Vinegar!

I just received the tarragon vinegar. I immediately used it to make a vinaigrette salad dressing! It was delicious. I love
