American Vinegar Works Tzatziki Sauce and Dip
Tzatziki is a classic cold sauce or dip from Southeastern Europe often associated with Greece. The mix of yogurt, cucumbers and dill give this dip a cool, refreshing flavor. It works beautifully as a cold starter for grazing with pita bread or cut vegetables. It is also commonly used as a sauce for gyros or with grilled meats. Which vinegar to use, and why
Yogurt is already sour, so the vinegar should add lift rather than more acid. Rice vinegar is the gentlest option. We use California Junmai Rice Wine Vinegar here. It is slow-fermented and aged in oak at our mill in Worcester, Massachusetts, which is why it seasons the dish rather than just souring it.
Make it ahead and keep it
It keeps covered in the fridge and the flavor settles overnight, which usually improves it.
