Which vinegar to use, and why

Rice vinegar is gentle enough to keep the onion crisp and let its own flavor through instead of flattening it. We use California Junmai Rice Wine Vinegar here. It is slow-fermented and aged in oak at our mill in Worcester, Massachusetts, which is why it seasons the dish rather than just souring it.

Make it ahead and keep it

It improves over the first few days in the fridge. Keep everything submerged in its liquid and use a clean spoon each time.

Ingredients

  • Thinly sliced onion or shallot

  • Vinegar

Directions

  1. Place thinly sliced onion or shallot in small bowl or mug. Cover with vinegar. Let stand at least 20 minutes. 

    Remove onions and use on salads, burgers or sandwiches. Reserve remaining vinegar for salad dressing (optional).
