Which vinegar to use, and why

Cider vinegar in hot cider stops it cloying. It is the difference between a drink you finish and one you abandon half full. We use 19.53 Miles From The Tree Apple Cider Vinegar here. It is slow-fermented and aged in oak at our mill in Worcester, Massachusetts, which is why it seasons the dish rather than just souring it.

Make it ahead and keep it

Warm gently rather than boiling, and add the vinegar at the end so the aroma survives.

By introducing Maple Cider Vinegar, you cut through the sugary sweetness of the local cider, adding a complex tang that highlights the spiced rum and warm aromatics. It’s basically a cozy sweater in a mug.

AVW Hot Apple Cider

Ingredients

  • 3oz local apple cider 

  • 1oz water 

  • 1.5oz spiced rum 

  • .25oz maple syrup

  • .5oz Maple Cider Vinegar (or your favorite AVW cider vinegar)

  • 1 cinnamon stick 

  • 1 star anise

  • 1 clove 

Directions

  1. Add cider, Maple Cider Vinegar, water, maple syrup, and spices to a small pot and bring to a simmer. 

  2. Once the mixture achieves a steady simmer, add remaining ingredients and pour into your favorite mug or thermos.
