Made with premium Massachusetts apple cider and aged in oak, this raw ACV pays tribute to Johnny Appleseed (born exactly 19.53 miles from our historic vinegar works). It delivers a rich, orchard-fruit depth perfect for dressings, slaws and skillet finishes.
  • Better Than Champagne Chardonnay Wine Vinegar: Brighter and rounder than typical champagne vinegars. This crystal-clear, oak-aged vinegar brings dishes to life and elevates delicate greens and fresh seafood without overpowering them.
  • Original Honey Wine Vinegar: Begins as mead made from real honey. Rested in American oak barrels, it delivers a warm, floral honeycomb glow. Round, smooth and perfect for sweet-and-tangy dressings or glazes.
  • California Junmai Rice Wine Vinegar: The gentlest vinegar in a well-stocked kitchen. Low in harshness with a clean, delicate finish, it is soft enough to season raw fish, quick pickles and noodle bowls.

Modern vinegar production has gone too far by sacrificing flavor for speed. We have gone a different way by embracing the value of time to revive an authentic production method from 1823. Because the original machinery no longer existed, we engineered and rebuilt our custom fermenter by consulting historical records and partnering with local university craftsmen. We brew our small batches inside a historic New England textile mill blacksmith shop that sits proudly on the National Register of Historic Places.

Our Craft: A Modern Approach to a Traditional Art

Great vinegars demand patience and precise conditions. We partner with local universities to custom rebuild 19th-century fermentation equipment, rejecting the rapid manufacturing methods of the 1900s. Our small-batch vinegars undergo two to three months of careful fermentation, followed by up to twelve months of aging in craft distillery oak barrels to develop rich, complex flavor profiles.
