It is slow fermented in small batches using a unique process from the early 1800s and aged in 25-gallon American oak barrels. I usually use Marin on a vinegar rice vinegar which is excellent but this is even better I've never had a better rice vinegar
This vinegar is complex, delicious, and only drawback is it is not inexpensive. I used it to make home made pickles and everyone loved them. My son-in-law is very particular about his pickles. Five Stars!
